March Slow Cooker Series- Clam Chowder

Today I am starting another series on Country Living On A Hill......one featuring slow cooker recipes.  I absolutely love my slow cooker but I have to admit, I go through streaks were I totally forget about using it.  It is a great time saver (throw the food in and forget about it) and it works out wonderfully when the kids are busy with sports after school.  Either I can have it ready to be eaten when they get home before sports OR it can be left on warm for them to eat after they get home from their sports.  Versatility!  Since indoor soccer season is in full swing and baseball season starts next week, slow cooker meals are going to be a huge help this month.

So as promised during last week's weekly menu here is the slow cooker clam chowder recipe that I promised.  I wish I knew where I had gotten this recipe- as I would definitely give them all the credit but this particular recipe came from one of my early recipes taken from the internet....so I probably got it off there in 2002 or 2003!

Creamy Clam Chowder for the Slow Cooker

3 slices of bacon, diced
1 medium onion, chopped
2- 8oz cans of clams
3 cloves of garlic minced
3 medium potatoes, peeled and cubed
3 cups water
1 tsp salt
1/2 tsp pepper
1-13 oz can of evaporated milk

In a small skillet, saute bacon and onions until bacon is done and onions are golden.  Drain and place in the slow cooker.  Add all the remaining ingredients EXCEPT the evaporated milk.  Stir well, cover and cook on low for 6-9 hours or until the potatoes are tender.  About an hour before serving, add the evaporated milk and stir to combine.  Cover and continue cooking for an hour.  Serves 4.



TIPS: 1. I doubled the recipe for my family.  I ended up with a LOT of broth so I think when I make it again, I will only use maybe 3-4 cups of water total - even though I am doubling the recipe.  The broth was awesome and we had french bread to soak up all that goodness so if you like good broth- then go ahead an use the entire amount like I did.

2. I didn't have 4 cans of clams-- all I had was two.  So I added the 2 cans of clams- juice and all and then I added some leftover cooked salmon that we had had on Monday night.  Oh my goodness.  It was beyond good.  I liked the addition of the fish so I will probably do that again, using whatever fish I have on hand.

I had planned on having a picture of the chowder itself but...... the chowder is white...all my bowls are white..and I didn't have any colorful garnishes for the top.  So the picture looked very bland.  However, the chowder does NOT taste bland-- give it a try for yourself!

    1. We all love clam chowder here but I have never made any homemade so I am so happy that this recipe turned out so well. Everyone loved it....which can be hard in our household of tweens and teens! I will definitely add this to our winter rotation.
