Can you believe that we are in the last week of February already? Where in the world did our second month of 2013 go? While I am craving spring and summer, Mother Nature obviously has other plans. We have gotten more snow here On A Hill in February than all the rest of winter combined! Plus we are in for yet another storm tomorrow. So maybe being at the end of February is a good thing-- spring is just that little bit closer!
Onward to my weekly menu:
Monday: It's Hubby's Birthday!! Salmon, scalloped potatoes, green beans, yellow cake with chocolate frosting
Tuesday: Clam Chowder in the slow cooker. This is a new recipe for us-- I will let you know what we think...
Wednesday: Burgers and Fries (since we didn't have them last week)
Thursday: Chicken and Homemade Noodles
Friday: Steak and taters ***
Saturday: Hot venison sandwiches with fries
*** We eat mostly venison steak which can be tough and dry if it is overcooked (which is very easy to do too). One of the ways I have found to keep it from being completely dry and tasteless is to marinade it. The kids adore those marinade packets found at the grocery store but I have been trying to come up with better for you marinades. So far the best one I found was marinading the steaks in some Ceasar Salad Dressing. That was really good. Does anyone have any good marinade recipes you could direct me to? I would love to start thinking about summer and have a good stack to try this summer when we eat a lot of steak off the grill!

Clam Chowder in the slow cooker - sounds delicious!
