Wild and Windy Wednesday- Brownie Cookie Recipe

Well actually yesterday was very windy but it sounds so much better on Wednesday than on Tuesday!  For some reason the baking/cooking/making bug has gotten ahold of me again and I have been busy in the kitchen.  I promised this recipe awhile back and do not have a photo at this time- they just don't last long enough in our household.  I guess I need to make them when the kids are at school and quickly snap a picture before they get home.

Brownie Cookies

2/3 cups shortening
1-1/2 cups packed brown sugar
1 tbsp water
1 tbsp vanilla
2 eggs
1-1/2 cups all purpose flour
1/3 cup baking cocoa
1/2 tsp salt
1/4 tsp baking soda
2 cups semi sweet chocolate chips
You can also add in 1/2 or so of nuts- but my younger ones hate nuts in baked goods.

In a large bowl, cream the shortening, sugar, water and vanilla.  Beat in eggs.  Combine flour, cocoa, salt and baking soda.  Gradually add flour mixture into butter mixture, beating until blended.  Stir in chocolate chips (and nuts if you are using).  Drop rounded balls about 2 inches apart on a parchment lined baking sheet.  Bake at 375 degrees for 7-9 minutes.  Make sure you that you do not over bake!  These cookies will be soft and chewy.  Let cool and see how long they last in your house!

    1. They are addicting!! I actually hid some in the freezer hoping to use them in my son's lunch. He found them and ate all but two without telling me. So he didn't get any in his lunch. Maybe next time!
