I didn't forget about everyone today-- I had to make a quick trip for a bit more shopping! Last week I forgot to grab a gift card for my niece for her birthday. My mom is going to visit her and I wanted to make sure she could take her present. I wish she lived closer as I would love to be able to see her more than a once or twice a year (and spoil her a little bit!). Then I had to run to Aldi's. I cannot get a loaf of bread in the city I live for less than $1.00. When we go through a loaf of bread every day or two, it really adds up. So I like to stock up on bread when I am in the area of Aldi's. I am sure they have a good laugh when I leave with my 10 loaves of bread!

8. Corn Casserole: I am not sure who first made this casserole but I believe it we first had it at my grandparents house. It has become a staple at every single holiday meal and when I think to make it for a regular meal my daughter is very happy. I often leave the 1/4 cup butter out, it is less greasy that way but either way is good. You can use low fat sour cream without any problems. We always put some sort of cheese on top. Sometimes mozzarella, sometimes sharp cheddar. Both are delicious, pick your favorite cheese or try out both to see which one you prefer.
7. Chocolate Rice Krispie Treats: I am addicted to these. I have made them and hidden them in the freezer before (then they were just for me-- shhh don't tell the kids! and no, there aren't any hidden in there now, they don't last very long). I don't ever make the topping. It is good but I like them without just as well and I usually don't have the extra marshmallows on hand when I make them.

Corn Casserole
1 lg can regular corn
1 lg can cream corn
1 box jiffy corn muffin mix
1 egg
8 oz sour cream
1/4 cup butter
1/2 cup cheese
Combine all ingredients except the cheese in a casserole dish. Bake at 375 degrees for 45 minutes or until center is set. Sprinkle cheese over top and bake for additional 10 minutes or until cheese is melted.

1/4 cup margarine
8 cups mini marshmallows
1/4 cup peanut butter
1 cup chocolate chips
6 cups rice krispies
Melt margarine and marshmallows together, add peanut butter and chocolate chips, stir to melt. Add cereal and press into a prepared pan (greased 9x13)
Topping:
3/4 tbsp margarine
2-3 cups marshmallows
1 cup chocolate chips
Melt all ingredients together and pour on top of treats.
Good without topping too!

ReplyDeleteI just became vegetarian, so I'm thinking that corn casserole might be a good thing to try. Looks fattening, but I'm not afraid of fat (unfortunately!). :-)
And I know what you mean about stocking up on certain items when you are in a bigger town: the home I grew up in was in the country and the closest grocery store was so expensive. We used to take a trip to a bigger town (which still wasn't much of a city) to do our bigger grocery shopping.

Thanks for stopping by! The corn casserole is very good. If you leave out the butter and use light sour cream it shouldn't be too terrible for you, I would think maybe :-D
ReplyDeleteWe have a couple of different places to shop in the "city" where I live but I can find better prices in the really big city that is about half an hour away. I try to go there once a month or so and stock up. With teenagers in the house I can never have enough food.

Oh yummy! Those chocolate rice crispy treats sound good. I've never had them like that before. We make them with corn syrup, then chocolate and butterscotch chips melted on top.
