Weekly Menu for 3/5/12

Hello March!  I know that snow, freezing rain and cold temperatures can all be a part of March and let's be honest April here in Michigan but I am feeling as though there is an end in sight to all this winter.  I am hoping for an earlier spring this year.  Last year I remember bundling up when we went camping on Memorial weekend and not digging out my capri's until after that.  Fingers crossed....

Last week my menu looked very nice, I just did not stick with it at all.  I went grocery shopping on Tuesday because our cupboards and frig were beyond bare.  I found some pick of the chick on sale and grabbed a package for dinner that night.  We all love chicken, especially whole chicken but I have not found it on sale very often in the past couple of years.  I wanted to get back and grab some more but I ended up staying away from the stores for the rest of the week.  My pocketbook is thanking me for that.

So onward to this week's menu.  I think I will probably stick with it a bit better.  Unless my trip to Costco on Thursday changes my mind.


Monday: Meatloaf, mashed potatoes, green beans

Tuesday: Potato soup in the slow cooker

Wednesday: Chicken and homemade noodles (I want to get this made sometime soon again-- forces have been against me!)

Thursday: Roast in slow cooker

Friday: Egg sausage casserole

Saturday: tuna noodle casserole

Sunday: Chicken Chimi's

  1. Sigh. I really need to get back to weekly menu planning. I used to be so good at it.

    On a related note... do you have a recipe, for your meatloaf, that you'd be willing to share? My husband loves it, but I don't know how to make it.

  2. I find it is just so much less stressful to at least have a guideline on what I would like to make for the week.

    As for a recipe-- well I don't actually have a recipe or exact amounts. For my meatloaf I am a throw a bit of this and a bit of that into the bowl. But I use about 1 pound to 1-1/2 pounds of ground venison (but beef works just as well), 1 egg, about 1/8 cup of milk, some Italian seasoning (it has basil, oregano, etc in it), and some italian seasoned bread crumbs (and I just use what I need to get a good consistency- not runny but not dry). Then I just mix it all up, throw it into a pan, throw the pan into a 350 degree oven for 45 minutes to an hour. Sometimes I will put ketchup on top before I bake- the kids like that. Otherwise we usually eat it with ketchup or chili sauce. Sorry I don't have exact amounts. The amount of meat varies often.

    Last night I made a meat loaf and used 1-1/2 pounds of meat and we had 2 small pieces left. My kids love meatloaf....
