Weekly Menu 3/12/12

Wow!  The days seem to be flying by.  Another week has come and gone and it is almost the middle of March.  How did that happen?  Not that I am complaining- I have never been one to enjoy winter.  Sure I love snow around the holidays but it could warm right up after New Years.

This week in Michigan is promising to be a very nice one.  60's most of the week and maybe even a day in the 70's.  I try not to get too excited as I have witnessed snow flakes in May here but a taste of the summer to come is always welcome.  Even better if we can just stay somewhat warm!

My menu this week doesn't really reflect the weather.  This week is the beginning of baseball practice for my oldest son.  Practice is rather late this year, 6-8:30 pm.  Last year practice for varsity was right after school and for JV it started at 4:30.  I have to admit that it will be nice to be able to feed everyone before practice, it will mean that we will be out and about until later at night.

Monday: Chicken Pot pie

Tuesday: Bourbon chicken

Wednesday: brats, oven fries, green beans

Thursday: corned beef and cabbage- yum!!

Friday: Mexican pizza

Saturday: Spaghetti and garlic bread

Sunday: On your own


I just realized that I have chicken dishes both Monday and Tuesday.  It is a bit unusual for us but I think it should still work.  I know that BB my daughter will have an issue with the bourbon chicken.  She used to like it, now she complains.  I am just glad that she is old enough to make something for herself then-- I get tired of only eating what my youngest two will.  Does anyone else suffer from picky eaters?  What do you do?  Do you try to create menus to please them or do you also incorporate other things to keep up a variety?

  1. Kerry do you have a good chicken pot pie recipe? The one I have uses Pillsbury biscuits, which I'm trying to stay away from.

  2. For the crust I use biscuit mix. I used to use commercially made ones (you know the ones) but for the past year I have been making my own mix. I just do the top crust and it is: 1 cup biscuit mix, 1/2 cup milk and 1 egg. Mix them all together then put it on top of your pot pie mixture. Bake at 400 degrees for 30 minutes. The kids love this and it uses up leftovers without any fuss.
