Phew another week of February come to a close. I don't hate February necessarily, I am just ready to be done with winter! Jamie (the hubby) has a birthday at the end of this week-- whoo hoo. He has one more year before the big birthday.....I get to have the big birthday this year. Not sure I am ready for that either!
So onward to this week, the last full week of February. Last week I did fairly well at staying with my planned menu until Sunday. I had planned to make a big old pot of bean soup and have a nice crusty bread on the side. Well Sunday morning came and the refrigerator veggie crisper was quite bare-- no celery and no carrots. I have to have those in my bean soup so the bean soup will have to wait.

Monday: Egg Sausage casserole- if I can get it made early. The kids don't have school and my daughter has requested that we go shopping. She also has a basketball game this evening so I am not sure how the timing will go.
Tuesday: Mexican Pizza: Hmmm we just started making this a couple months ago. Make some corn bread (either homemade or boxed), bake it in a cast iron skillet. Brown up some hamburger, add taco seasoning and simmer. When corn bread is done, take out of oven, place taco meat onto cornbread, top with shredded cheddar cheese and stick back in the oven for 3-4 minutes until cheese is melted. Then each person can top the pizza however they like: lettuce, tomato, black olives, green peppers, hot peppers, salsa and sour cream are some ideas!
Wednesday: Hot Ham and Cheese Loaf: if we have any cheese left!
Thursday: Burgers and oven fries
Friday: Bean soup
Saturday: Jamie's choice-- it's his birthday! He hasn't given me his birthday dinner wish yet so I haven't been able to plan ahead. I do know that he wants a homemade yellow cake with homemade chocolate frosting.
Sunday: Chicken and homemade noodles.
I think I have found a decent mix of things the kids will eat yet enough variety for the rest of us- that is the never ending challenge in my household. Hope your week is a tasty one.

I've started meal planning because of diet change (fresh veggies/lean meats only - no processed foods) and it's been so great. I spend less money because I'm eating at home and taking leftovers for lunch and food doesn't go to waste like it used to!

ReplyDeleteJacqui: the ham and cheese loaf is very easy. I make homemade pizza dough, roll it out, stick on some sliced ham and some cheese down the middle. The original recipe I had called for 1/4 mayo mixed with the cheese (shredded). Half of us like that, the other half doesn't so I usually make two. Cover the ham and cheese, moisten the edges with water to seal- pinch to seal well. Cut 3 slits diagonally down the loaf. Bake at 350 for 35-40 minutes. Easy hot sandwich for a crowd!
