I could not have planned a better meal for yesterday (Sunday). I took the big turkey I bought after Thanksgiving out of the freezer in the middle of the week because I have been so hungry for turkey. Forecast had said it was suppose to snow on Sunday but I thought I had heard that it would be lake enhanced. It is about an hour and a half drive to Lake Michigan from our house and usually if the snow is lake enhanced it doesn't affect us. Sometimes if it is super windy and at just the right direction we will see lake effect snow but not very often. Anyway it wasn't lake effect snow but an actual system that came through here and dumped quite a bit. Roads were slick and nasty so I stayed home all day and cooked! I made peanut butter sheet cake, homemade rolls, turkey, dressing, and mashed potatoes. YUM! Now the bones are in the stock pot simmering for homemade broth.
Here is my menu plan for this week--
Monday: Hot turkey sandwiches with gravy
Tuesday: Spaghetti with homemade meatballs and garlic bread
Wednesday: Hot ham and cheese loaf and ?? (it depends on how long of a ride we have in front of us for BB's basketball game. I think it's a long one and we might have to leave almost right after school).
Thursday: Balsamic marinaded chicken, baked potatoes, green beans
Friday: homemade pizza
Saturday: Chili
Sunday: Snacks for the boys while they watch the Super bowl. I still haven't decided which ones to make though.
Thankfully this is a grocery shopping week! I cleaned out the frig yesterday while waiting for the turkey to be done and it was almost completely bare (other than condiments)! Glad we have the turkey and leftovers for tonight.
